Wine making : The harvests are done when the grapes are on their optimal maturity to extract a maximum of fruit.Cold pre-fermentation during 3 days with temperature control (between 12°C and 14°C) is necessary to get a higher fruit extraction. During the fermentation, 2 to 3 rack and return are done to extract aromas and substance.
Ageing : In 600 L barrels for 18 months
Oenologist Appreciation : Ruby colour, this deep and dark wine reveals a
nose of cocoa with a vanilla note. The palate keeps this greedy and subtly woody character, supported by melted and silky tannins.
