“L’Âme du Chêne” Red

L'Ame du Chêne Red

L’Ame du Chêne Red

Story : In the depth of its soul, connected to nature… the majestic tree turns into “demi-muids” to offer cocoa and vanilla aromas.

Grape varieties : 60% grenache, 40% carignan

Soil : Clay and limestone, plot selection of vines aged 50, on well exposed hillsides facing south.

Climate : Mediterranean

Wine making : The harvests are done when the grapes are on their optimal maturity to extract a maximum of fruit.Cold pre-fermentation   during 3 days with temperature control (between 12°C and 14°C) is necessary to get a higher fruit extraction. During the fermentation, 2 to 3 rack and return are done to extract aromas and substance.

Ageing : In 600 L barrels for 18 months

Oenologist Appreciation : Ruby colour, this deep and dark wine reveals a
nose of cocoa with a vanilla note. The palate keeps this greedy and subtly                                 woody character, supported by melted and silky tannins.

« A subtle nose of peony, round and sensual in mouth, very thin tannins and a spicy finish.”

Mark : 13,5
