Grape varieties : 60% grenache, 40% carignan
Soil : Clay and limestone, plot selection of old vines
aged over 50 years, on hillsides facing south.
Climate : Mediterranean
Wine making : The harvests are done when the grapes are on their optimal maturity to extract a maximum of fruit.
Cold pre-fermentation during 3 days with temperature control (between 12°C and 14°C) is necessary to get a higher fruit extraction. During the fermentation, 2 to 3 rack and return are done to extract aromas and substance.
Ageing : Underground concrete vats
Oenologist Appreciation : Ruby colour, the nose is composed of red berries and a hint of licorice. The flavors come back in a supple mouth with fine tannins and a beautiful length. An atypical wine !
